Touraine Oisly is the unique Touraine appellation to only produce white wines from parcels of vines carefully selected for their exceptional qualities (soils, hydric condition, and sun exposure).

By harvesting the Sauvignon Blanc at full maturity, it can express a range of aromas not found in the other Touraine wines.

Vinification must take place at temperatures below 20°C to guarantee aromatic freshness.

The wines are then aged on fine lees until at least the end of April following the harvest. It allows the winemaker to better express the complexity and aromatic spectrum of the wine.

Winemakers present their wines to a tasting group each vintage. Wines are tasted by blind tasters of the Touraine AOP who have the task of selecting the wines which can be specifically Touraine Oisly.

Expressions of the Sauvignon Blanc with Touraine Oisly are like nowhere else! Each estate brings its own style, and the winemaker’s touch is of course essential. Our wines have in common a “Oisly’s touch”: an aromatic finesse, with notes of citrus fruit, white flowers and hints of exotic fruit. On the palate, the wines of Touraine Oisly reveal a full body perfectly balanced with a lively freshness.

The style of Sauvignon wines from Touraine Oisly is very different from the other sauvignons in the Loire Valley.

When tasting these wines, the style is charming, developing fruity and floral aromas with a pleasant finesse, behind the fading varietal character of the grape variety.

These wines reach their perfect expression in their early youth, accompanying light and succulent dishes such as Loire fish terrines, crayfish in a lemongrass nage, Touraine chicken curry, rillettes and Touraine rions, asparagus, crunchy vegetables from the Loire Valley, goat cheeses such as the excellent Selles-sur-Cher and Sainte-Maure from Touraine.
